The extract based on sulfuraphane, a powerful component of broccoli, acts as an indirect antioxidant, as has been demonstrated in experimental models in Vivo (in animals) and in Vitro (cell cultures), where they reduce the incidence of some forms of tumor, explained the Dr. Jaime López Cervantes, head of the investigation.
"Various epidemiological studies provide evidence that people consuming high amounts of vegetables from the cruciferous family - such as cauliflower, cabbage, broccoli and radishes - experience a lower risk of developing various types of cancer," he explained.
The specialist recognized that the mechanism of action of broccoli is unknown, although he suggests that those responsible for this activity is the high content of potent activating secondary metabolites of detoxification enzymes.
Sulforaphane from broccoli - powerful component to prevent tumors
According to the researcher, broccoli has antimicrobial activity against Helicobacter pylori, and recent studies have shown that topical application of sulforaphane-rich plant sprout extracts protects against UV rays in animals and humans.
Sulforaphane is obtained from the broccoli by-product that are the inflorescences of the plant, that is, the edible part of the vegetable that is not collected since it lacks the quality standards in the market.
Studies have also been carried out to quantify sulforaphane in the leaf, stem and root of the vegetable, since these parts of the plant only serve as fertilizer in the fields of cultivation, and could be used to produce a product intended for human consumption.
Once the sulforaphane extraction and stabilization proposal has been developed and protected, ITSON will proceed to develop a proposal for economic feasibility and search for specific markets for industrial scale-up.
It should be noted that, in the Yaqui Valley, in Sonora, 500 hectares of broccoli are grown each year with an average production of 12,377 tons, the entire product is sold fresh and is destined for export.
A viable alternative for the comprehensive use of broccoli agricultural residues is the promotion of a value-added product for use in the food industry, whose content is high in fiber and protein, as is the case of flours obtained from the cruciferous waste.
